Sadhya is a traditional vegetarian feast served on a banana leaf with about 25 -27 dishes distributed all over it mostly. Both the parties organize this event as a mark of respect and joy shown towards the relatives and friends they invited during the fortunate period. Sadhya is an important component among the list of events held during any marriage function. All the dishes served on a leaf is a eye catching view for an outsider as this form of arrangement is seen nowhere in the globe. In addition to the fact , it makes a more healthy, naturalistic and eco friendly dish with wide range of health benefits. Here we present you some basic components included in the feast.
- Rice and Sambar:
A sadhya is incomplete without its main ingredient – Kuthari, a semi brown boiled rice served in the leaf is the principal component. Mata ari, popularly known as Kerala matta is used for this purpose. Sambar is a thick gravy liquid made of pulses, tomato and drumsticks poured above the rice to bring deliciousity to the meal.
This dish is a mixed preparation of black peas, coconut milk and ginger. Ginger has added salt, pepper and spices added to it in equal proportion to make delightful for the person who is having it. Once you are ready with olan have some yourselves and we promise that you will get fond of the item.
It is a fluid like dish similar to that of soup made basically out of tamarind, tomatoes and hot spices like black pepper or cilly pepper. However in some specific regions rasam is not included in the feast.
Thoran can me made out of 2 vegetables varied in an unequal proportion such as peas, beans, jackfruit, carrot, beetroot etc mixed with coconut shred into granules. Any vegetables can be utilized depending on the taste of the audience. It is similar to that of sabjis used in north India but the dissimilarity is that in sadhya they adds coconut milk into it.
- Puli Inji:
It consists of 2 items namely Puli (tamarind) and Inji(ginger). It is a pickle made of these two ingredients but may also add green chillies and jaggery for additional benefit in taste. It is a must have item for a traditional sadhya and it is well preferred by the majority for its peculiarity in taste.
Avial is typical for its kind in Kerala sadhya. It is a combination of various vegetables and coconut oil mixed with curry leaves and is served hot right after preparation for a delicious meal. It is most commonly used along with rice by Keralites.
- Banana Chips and Pappadam:
A well favoured dish by all malayalees who are on for a homely atmosphere in a meal. Well preferred for its taste and avoiding these two ingredients in a meal is un imaginable for the people of Kerala. Pappadam, same as pappad yet it is filled with more air and oil and can be used as an appetizer during the dish.
- Payasam and Pazham:
A traditional sadhya ends with payasam. It is a delicious dessert served in small amount in a plastic container or in leaf itself. Payasam are of many types- Palada payasam, pal(milk) payasam. sarkara payasam are widely used in a sadhya. Pazham ( banana ) is served along with payasam as these two forms a great combination at the end of the meal satisfying your appetite.
